bread pudding w/bananas

I started to make someone else's recipe, but found it was missing ingredients and instructions (not from this site). So, off I went on my own to come up with this recipe. Hope you enjoy it as much as we did. This is the first recipe I have ever posted here, I hope it comes out okay! Enjoy the pudding, we thought it was yummy!

Ingredients For bread pudding w/bananas

  • 3/4 Loaf pkg
    french loaf bread (cut or torn into 1 inch pieces)
  • 1/4 Cup
    butter or margarine (melted) i used real butter
  • 3
    eggs
  • 1/2 Cup
    granulated white sugar
  • 1 Tbsp
    vanilla extract( i used pure mexican vanilla)
  • 1 Tbsp
    cinnamon
  • 1 tsp
    nutmeg
  • pinch
    salt (sea salt)
  • 2 Medium
    bananas (firm)
  • 1 Cup
    milk (whole milk)
  • SAUCE
  • 3 blsp
    butter or margarine (i used real butter)
  • 2 Tbsp
    granulated white sugar
  • 1 Tbsp
    cornstarch
  • 3/4 Cup
    milk (whole)
  • 1/4 Cup
    light corn syrup
  • 1 tsp
    vanilla extract (i used pure mexican vanilla)

How To Make bread pudding w/bananas

    Bread Pudding: Cut or tear up French Bread Loaf into 1 inch pieces. pour melted 1/4 cup butter over bread pieces and toss to coat.

    In medium bowl beat eggs, add milk, sugar Cinnamon, Nutmeg, Salt and last add Vanilla. Mix well until blended.

    Thinly slice the two peeled bananas. (optional) Please in lemon water mixture or 7UP to prevent browning of the cut bananas).

    Add butter coated bread pieces and carefully toss egg and bread to thoroughly coat bread. Allow to soak mixture for at least 30 minutes. All Pieces should be well coated and saturated. Add sliced bananas (drained from the lemon water mixture), and gently mix well.

    Transfer Bread mixture into greased 2 quart pan or split into 2, 1 quart greased pans. Bake for 4 minutes at 350F, then reduce temp to 300F and bake for 15 minutes. This will allow pudding to set. While baking for the last 15 minutes prepare sauce.

    Sauce: Melt butter in small sauce pan on stove top over medium heat. Add sugar and cornstarch, mix well. Add milk and corn syrup. Cook and stir over medium heat. Stir continually.

    Heat mixture until it comes to a full boil. Allow to boil for 1 minute. Remove from heat and stir in vanilla extract. Serve sauce warm over warm pudding, covering the serving well. (Left overs are even better the next day - if there are any!)
