Ingredients For rich chocolate ice cream

  • 1 3/4 c
    sugar
  • 1/4 c
    all purpose flour
  • 1/4 tsp
    salt
  • 2 c
    milk
  • 2
    eggs, slightly beaten
  • 3 1/2
    blocks 3 1/2 ounces unsweetned baking chocolate, broken into pieces
  • 1 Tbsp
    vanilla
  • 4 c
    light cream

How To Make rich chocolate ice cream

    Combine sugar, flour, and salt in medium saucepan; gradually stir in milk. Blend in eggs; add baking chocolate. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; add vanilla. Beat with wire whisk until mixture is smooth. Chill thoroughly. Add light cream to chilled mixture. Freeze in ice cream freezer according to manufacturer's directions. (For firmer ice cream, cover, and freeze for several hours.)

    Variation, Chocolate Rum Nut Ice Cream: Substitute 1 teaspoon rum extract for the vanilla. Saute 3/4 cup coarsely chopped nuts in 2 tablespoons butter over medium heat for 4 minutes, stirring occasionally. Add nuts after light cream is thoroughly blended into mixture.
