1Let ice cream set out for for 15 minutes. Scoop out 2 big scoops. 1 for each cocktail or parfait glass. Roll each in toasted coconut. Pour 1 shot of Kahlua over each scoop. Garnish with slivered almonds if desired.
2To toast coconut: Place coconut in a pie pan; place under broiler on med heat in medium part of oven. Brown and stir for about 2 minutes. Watch closely.
3The problem with this recipe is you will want more than one scoop.
