This recipe came from South Beach Diet, in an email. A great way to use peaches. I believe frozen peaches could be used, also, if thawed. But really, fresh is best! (photo from South Beach Diet)

Ingredients For cool down peach popsicles

  • 4 md
    peaches, peel and chopped
  • 2 Tbsp
    sugar substitute
  • 1 c
    plain lowfat greek yogurt
  • 2 Tbsp
    fresh mint or basil leaves, chopped (optional)
  • 12 sm
    paper cups and wooden sticks, or popsicle molds for 12 popsicles

How To Make cool down peach popsicles

  • 1
    In a blender, purée peaches and ½ cup of water until smooth. Add sugar substitute, yogurt, and mint or basil leaves (if using) and blend until combined.

    Divide mixture evenly among the paper cups and insert a wooden stick into the center of each. (Or fill popsicle molds according to manufacturer's directions.)

    Place pops in the freezer for at least 4 hours or overnight. When ready to serve, peel off paper cups or dip molds in warm water to remove popsicles.
