    lbs white sugar
  • 1/4
    cup water
  • 1/8
    teaspoon vanilla extract
  • 1/4
    cup brandy
  • 11/2
    tablespoons lemon juice

    Peel and seed nectarines, and cut into large chunks. Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.

    Keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
