Marmelatha Nektarinia - Greek - Nectarine Preserve
A fabulous preserve to make with ripe summer nectarines, this is a simple and easy recipe.

- lbs large ripe nectarines
- lbs white sugar
- cup water
- teaspoon vanilla extract
- cup brandy
- tablespoons lemon juice
1Peel and seed nectarines, and cut into large chunks.
Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.
2Keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
3Place in sterilized jars and allow to cool completely before sealing.
