Another family favorite. I'm going through many of my Grams recipes, that my mom finally found...so many, it's hard which ones to make first...LOL! She was an amazing cook!

Ingredients

CRUST AND CRUMBLE MIX FOR TOP

1/4 c
butter, softened
1 c
brown sugar
1 1/2 c
shredded coconut
1 c
sifted flour
1/2 tsp
salt

FILLING

1 c
crushed pineapple
3/4 c
sugar
3 Tbsp
corn starch
1/4 tsp
salt
1 Tbsp
butter
1 Tbsp
lemon juice

Step-By-Step

Step 1 Direction Photo

1Preheat oven to 350 degree F.
Crust:
In a bowl, cream butter and sugar. Mix in remaining ingredients until crumbly. Press half of the mixture into a 9 inch square pan.

2Filling:
In a medium saucepan, combine pineapple, sugar, cornstarch and bring to a boil, cook until thick and clear, about 5 minutes, stirring constantly.

Remove from heat and stir in butter and lemon juice, set aside to cool slightly.

3Spread filling evenly over crust.

4Spread remaining crumbs evenly over crust.


Press crumbs firmly onto filling.

5Bake for 30 - 35 minutes, or until golden. Cool and enjoy!
