Ingredients For fresh fruit cobbler

  • 1 c
    sugar
  • 3 Tbsp
    cornstarch
  • 3/4 tsp
    ground cinnamon
  • 3 c
    sliced peeled peaches or nectarines (5-6 medium)
  • 2 c
    sliced unpeeled red plums (6-8 large)
  • 1 c
    blueberries
  • 1 c
    all purpose flour
  • 2 Tbsp
    sugar
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/3 c
    shortening
  • 3 Tbsp
    milk
  • 1
    egg

How To Make fresh fruit cobbler

    Heat oven to 375. Mix 1 cup sugar, the cornstarch, and cinnamon in 3 quart saucepan. Stir in peaches and plums, Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir in blueberries. Pour into ungreased baking dish, 8x8x2 inches.

    Mix flour, 2 tablespoons sugar, the baking powder, and salt. Cut in shortening. Mix in milk and egg. Drop dough by 9 spoonfuls onto hot fruit mixture. Bake until topping is golden brown, 25-30 minutes. Serve with cream or ice cream, if desired. *If using self rising flour, omit baking powder and salt.

    Note: Other combinations of fresh fruit totaling 6 cups can be substituted (purple plums, berries, cut up rhubarb, or cherries).
