I don't know where this recipe came from. I tried checking a couple of places, but no luck. Creamy, rich, and a fruit garnish! Perfect for any kind of get together! Photo is from a friend & member Lisa Nicometi Garrow. Prep time, does not included chill time.

2 cgraham cracker crumbs (about 32 squares)

1/2 cgranulated sugar

1/2 tspcinnamon
-
1/2 cbutter or margarine, melted
- ********FILLING********

3 pkg(8 oz. each) regular cream cheese or reduced-fat cream cheese (neufchatel), softened

1 1/2 cgranulated sugar

1 tspvanilla extract
-
4 lgeggs, separated
-
fresh fruit--you could also use pie filling

1Preheat oven to 350°F. Grease a 15 x 10 x 1 inch baking pan.

2In a small bowl, combine first 3 crust items; stir in melted butter. Press into prepared baking pan. Bake the in preheated oven for 5 minutes. Remove and set aside.

3In a large mixing bowl, beat together first 3 filling items, until smooth. Add egg yolks; beat on low speed, just until combined.

4In a small mixing bowl, beat egg whites, until soft peaks form; fold into cream cheese mixture. Pour over crust. Bake 28-39 minutes, or until center is almost set.

5Cool on a wire rack for 30 mins. Refrigerate overnight.

6Prior to serving, garnish with fresh fruit. Makes 1 large cheesecake dessert, cut into 24 servings. (Can use a 9 x 13 x 2 inch pan, Cook a little longer, if using this size pan.)
