This recipe has been changed from the original. I used a different nut and added Maple syrup to create a new bar. You can make it with pecans or walnut's. Both ways are delicious. Enjoy with a nice cup of coffee,or a scoop of vanilla ice cream on top.
1Heat oven to 350 degree's. Combine all ingredients for the cookie. It's easier to use your hands. Combine well. Press dough in to an 8 inch square parchment lined pan. You can use foil if you grease it well.
2Bake at 350 until edges are slightly browned. Remove from oven and set aside.
3Make the filling. In a sauce pan. Combine all ingredients together except for the nuts,and vanilla. Stir and cook over high heat until boiling. Reduce heat to medium high.Stir until the mixture gets thickened. This should take about 7-10 minutes.
4Add the vanilla and nuts. Pour on top of cookie crust. Spread mixture evenly on top. Place back in oven and bake about 20-30 minutes. The filling will look thick and browned nicely.
5Remove from oven and cool. Cut in to squares. Serve alone,or with ice cream on top.
