Ingredients For triple ginger cookies

  • 2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1 tsp
    ground ginger
  • 1/2 tsp
    salt
  • 3/4 c
    unsalted butter
  • 1 1/4 c
    sugar, divided
  • 1/4 c
    molasses
  • 1
    egg
  • 1 Tbsp
    finely minced fresh ginger
  • 1 Tbsp
    finely minced crystallized ginger

How To Make triple ginger cookies

    Sift flour, baking soda, ground ginger, and salt onto waxed paper. Melt butter in small heavy saucepan over low heat; pour into large bowl and cool slightly. Add 1 cup sugar, molasses, and egg; mix well. Add flour mixture; mix well. Add fresh ginger and crystallized ginger; stir just until blended. Cover; refrigerate 1 hour.

    Preheat oven to 375. Lightly grease or line cookie sheets with parchment paper. Shape dough by tablespoonfuls into 1 inch balls. Roll in remaining 1/4 cup sugar. Place 3 inches apart on prepared cookie sheets. (If dough is very sticky, drop by teaspoonfuls into sugar to coat.)

    For chewy cookies, bake 7 minutes or until edges are lightly browned. For crispier cookies, bake 9-11 minutes. Cool on cookie sheets 1 minute. Remove to wire racks; cool completely.
