3/4 cunsalted butter

1 1/4 csugar, divided

1/4 cmolasses

1 Tbspfinely minced fresh ginger

1 Tbspfinely minced crystallized ginger
How To Make triple ginger cookies

1Sift flour, baking soda, ground ginger, and salt onto waxed paper. Melt butter in small heavy saucepan over low heat; pour into large bowl and cool slightly. Add 1 cup sugar, molasses, and egg; mix well. Add flour mixture; mix well. Add fresh ginger and crystallized ginger; stir just until blended. Cover; refrigerate 1 hour.

2Preheat oven to 375. Lightly grease or line cookie sheets with parchment paper. Shape dough by tablespoonfuls into 1 inch balls. Roll in remaining 1/4 cup sugar. Place 3 inches apart on prepared cookie sheets. (If dough is very sticky, drop by teaspoonfuls into sugar to coat.)

3For chewy cookies, bake 7 minutes or until edges are lightly browned. For crispier cookies, bake 9-11 minutes. Cool on cookie sheets 1 minute. Remove to wire racks; cool completely.
