Okay… here ya’ go… it’s an excellent wafer cookie that’s gluten free, and full of flavor. I serve these year round at a nice afternoon tea, or to my guests at an open house during the holidays. They are not the typical ultra sweet cookies that you find so often at parties… just some really good flavor and taste. So, you ready… let’s get into the kitchen.

Ingredients For tasty honey & almond cookie wafers

  • 2 c
    almond flour
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    ground cardamom
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    sea salt
  • 1/8 tsp
    allspice
  • 3 Tbsp
    organic honey
  • 1 Tbsp
    organic coconut oil
  • 1 tsp
    vanilla extract

How To Make tasty honey & almond cookie wafers

    Gather your ingredients.

    Add the almond flour, cinnamon, cardamom, baking soda, sea salt, and allspice to a large mixing bowl.

    Whisk together until combined, and set aside.

    Add the honey and coconut oil to a small saucepan.
  • 5
    Over medium-low heat, whisk the ingredients until melted.

    Add the vanilla extract and whisk to combine.

    Chef’s Tip: Use a whisk for this process and not a spoon… this makes sure the ingredients are fully combined.

    Add the honey/coconut oil/vanilla mixture to the dry ingredients.

    Using a wooden spoon to mix until it forms a thick dough.

    Lay the dough onto a piece of parchment paper, and form into a rectangle about 1/8-inch thick.

    Chef’s Tip: I use a pastry scraper to help form the dough in a nice straight rectangle.

    Place a rack in the middle position, and preheat the oven to 350f (175c).

    Use a long knife or pizza cutter to divide the dough into nice rectangles.

    Chef's Note: You could also use cookie cutters to cut them into nice festive patterns.

    Place them on a piece of parchment paper on a baking sheet, and then place in the preheated oven for 12 – 14 minutes… or until they begin to brown.

    Allow the wafers to cool, before serving. Enjoy.
