To prepare cheesecake crumble- combine graham cracker crumbs, nutmeg and cinnamon in a small bowl. cut cream cheese into small cubes. cut cream cheese into the graham cracker mixture until it resembles course crumbs. I just use my hands. set aside.
in bowl, using stand or hand mixer- cream butter and 4 oz cream cheese until smooth. add sugars and eggs and beat. add strawberry oil
slowly mix in salt, baking soda, cornstarch and flour. beat until well blended.
fold in cheesecake crumble into batter
drop my rounded teaspoons or use cookie scoop onto ungreased cookie sheets. bake at 350 for approx 12 minutes or until golden brown.
allow cookies to cool on cookie sheet for 45 seconds and then transfer to cooling rack or counter.
