This recipe started from the oatmeal box & was changed by me, to have less fat & sugar. However, overall, it depends on what add-ins you use, that will add more fat & sugar to them, in the end.

Ingredients For sharon's oatmeal cookies revised

  • cooking spray, shortening, or parchment paper
  • 1/2 c
    unsalted butter
  • 1/4 c
    light stick margarine (i used blue bonnet)
  • 3/4 c
    brown sugar, firmly packed or splenda brown sugar
  • 1/4 c
    granulated sugar or splenda
  • 1 lg
    egg
  • 1 tsp
    vanilla extract
  • 1 c
    unbleached all-purpose flour
  • 3/4 tsp
    salt
  • 1/2 tsp
    baking soda
  • 3 c
    uncooked oatmeal
  • 1/4 c
    dried cranberries, chopped (or other dried fruit, nuts, chocolate chips, or coconut), optional
  • 1/4 to 1/3 c
    water, a little at a time, if mixture seems dry

How To Make sharon's oatmeal cookies revised

    Preheat oven to 350°F. Grease or spray cookie sheet or use parchment paper.

    Beat together ¾ cup shortening or other fat, sugars, egg, water, & vanilla ext., until creamy.

    Mix together flour, salt, baking soda & make sure that it is mixed well. Add oatmeal to this dry mixture; mix well.

    Add dry mixture to wet mixture about 2 cups at a time; stirring well after each addition. You may add some water here, if mixture seems too dry.

    Add in any fruit or nuts, at this time, if desired. Mix well. May also add some water after optional add-ins, if mixture is too dry.

    Drop by rounded teaspoonsful onto greased cookie sheet or parchment paper lined cookie sheet.. (I used about 1 ½ teaspoonsful per cookie.) Bake for about 12 mins. Cool on wire rack.
