A light and chewy oatmeal cookie with just the right amount of chips so as not to over power them

Ingredients

1 stick
butter softened
1 large
egg
2/3 c
brown sugar, firmly packed
1 tsp
baking powder
1/4 tsp
salt
1/2 c
oatmeal (i used rolled oats non instant)
1 1/4 c
flour (more if needed to make a firm batter)
1 tsp
vanilla extract
1/2 c
assorted chips (i used milk chocolate and peanut butter)

Step-By-Step

1Preheat oven to 350 degrees

2Mix egg, butter, baking powder, vanilla, salt, and sugar together until fluffy. Mix in the oatmeal and flour then fold in the chips.

3Drop by spoon fulls onto an ungreased cookie sheet and bake for 10-12 minutes until edges start to brown. Do not over bake.
