This is a delicious gingerbread cookie recipe. For a fun holiday twist, roll out dough and using a stencil, create simple gingerbread houses with the doorway cut out to perch on your favorite holiday beverage: goes create with coffee or cocoa!

Ingredients

2 c
gluten-free flour
1 tsp
baking powder
1/2 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
allspice, ground
1/4 tsp
cloves
2 tsp
ginger
1/4 tsp
sea salt
1 large
egg
3/4 c
butter
1/4 c
molasses
1/2 c
brown sugar, firmly packed

Directions Step-By-Step

Cream nondairy butter and sugar, add in egg and molasses followed by dry ingredients; wrap and chill dough for a few hours before rolling out thinly between wax paper.

Prepare royal icing:
Mix 1lb (4 cups) powdered sugar with 1/2 teaspoon cream of tartar and3 egg whites. Whip at high speed at least 7 minutes and keep covered when not decorating (hardens and dries quick).

Roll and bake out gingerbread cookies or make little houses:
Make a little cardboard cutout of the front (will also be used for the back), little wall cutout (you'll need 2 squares per house) and a longer rectangle for the roof panels (you'll need 2). Bake at 350 for 10 to 15 minutes or until walls are well done and not soft.
