These are absolutely to die for! Ohhhhhhh soooooo good! My husband hates Coconut and he couldn't even tell that they had coconut in them! He loves them! Yes! My coconut hater loves them! They are also selling great for us at the Farmers Markets!

Ingredients For lori's ranger cookies

  • 1 c
    butter~room temp
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 2 lg
    eggs~lightly beaten
  • 2 c
    all purpose flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 2 c
    rice crispies
  • 1 c
    quick oats
  • 1 c
    coconut

How To Make lori's ranger cookies

    Preheat oven to 350 degrees. Using a mixer, cream together butter and sugars. Add the two eggs, one at a time and mix well.

    In a separate bowl combine the flour, baking soda, baking powder and salt. Slowly mix into wet mixture. Stir in by hand the quick oats, rice crispies and coconut just until combined. Line baking sheet with parchment paper. Roll dough into 1 inch balls and place on lined cookie . Bake for 10 to 12 minutes or until edges are a golden brown. Allow to slightly cool then remove to a wire cooling rack to finish cooling.
