After my mother passed away, I was the lucky daughter to receive her old Searchlight cookbook. I found this recipe written by my mother tucked in the cookbook for these wonderful spongy dessert bars. A Christmas favorite.

Ingredients

6
eggs separated
1 c
sugar
1/4 tsp
salt
1 Tbsp
lemon zest, grated
1 Tbsp
lemon juice
1 c
flour
1 c
chopped dates
1 c
chopped pecans (optional)
1 c
confectioner's sugar for rolling.

Directions Step-By-Step

Beat egg yolks until thick. Add salt, sugar, lemon juice and lemon zest. Mix well.
Beat egg whites to soft peak.

Sift flour and re-measure. Fold into egg mixture. Add dates and nuts. Carefully fold in egg whites.

Pour into 8X12 baking dish. Bake in slow oven, 325 degrees for about 40 minutes.

Completely cool. Cut into bars and roll in confectioner's sugar.
