Galettes (Waffle Cookie)

My mother and her mother before made these delicious, thick, waffle cookies every Christmas!

Ingredients

1 lb.
butter
1/4 tsp.
salt
1tsp.
cinnamon
12
eggs
3/4 cup
white sugar
2 box
dark brown sugar
1 1/2 tsp
vanilla
7 cups
flour

Step-By-Step

1Mix butter and sugar together. Add eggs and vanilla, beat by hand. Add other ingredients.

2Mix in flour a little at a time to form stiff dough. Test cook one, may need to add additional flour. Cookie should be thick and chewy.

3Must use waffle iron. Drop spoonful of dough on waffle iron. Do not over cook.

4May dust with confectioner's sugar (optional).
