I first tried these about ten years ago and they quickly became one of my favorite cookies. The kids love them too!

Ingredients

1 c
butter, softened
3/4 c
granulated sugar
3/4 c
packed brown sugar
2 large
eggs
1 tsp
vanilla extract
1 1/4 c
all purpose flour
1/2 tsp
salt
1 tsp
baking soda
1/2 tsp
ground cinnamon
3 c
quick or old-fashioned oats
1 pkg
(10 oz.) hershey's cinnamon baking chips

Step-By-Step

1In a large bowl, combine butter, granulated sugar, brown sugar, eggs and vanilla extract.

2In another bowl, combine flour, baking soda, salt and cinnamon.
Gradually add to the butter/sugar mixture.

3Stir in the oatmeal and the morsels.

4Drop by rounded tablespoon onto an ungreased baking sheet.

5Bake in a preheated 375ยบ oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

6NOTE: You can substitute Nestle Butterscotch morsels for the cinnamon chips, for a slightly different taste.
