Ingredients For cowboy cookies

  • 16 Tbsp
    butter, room temperature (2 cubes) don't use margarine
  • 1/2 c
    white sugar
  • 1 c
    brown sugar, firmly packed
  • 1 tsp
    pure vanilla extract
  • 2 lg
    eggs
  • 1 1/2 c
    all purpose flour
  • 11/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 2/3 c
    oatmeal, uncooked
  • 3/4 c
    coconut
  • 1 1/2 c
    chocolate chips, mini
  • 1 1/2 c
    heath english toffee bits
  • 1/2 c
    pecans, in pieces (optional)

How To Make cowboy cookies

    Preheat oven to 350 and line your baking sheets with parchment.

    Sift together flour, baking soda and salt together and set aside. In large mixing bowl combine butter and sugars and beat till well blended. Then add eggs and beat till light and fluffy.

    Add flour mixture to the sugar mixture. Stir to blend. Now add coconut and stir to blend. Add oatmeal, stir to combine. Now add chocolate chips, toffee bits and nuts if you like nuts in your cookies.

    Drop spoonfuls or use a cookie scoop for uniform size cookies, about 3" apart and bake for 10 to 12 minutes or till a light golden brown. Store in airtight container for future enjoyment.
