Ingredients For chocolate filled oatmeal bars

  • 1 c
    butter, softened
  • 2 c
    packed light brown sugar
  • 3
    eggs
  • 1 tsp
    vanilla
  • 3 c
    quick cooking oats
  • 2 1/4 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • chocolate filling (below)
  • FOR THE CHOCOLATE FILLING
  • 2 c
    12 ounce package semi sweet chocolate chips
  • 1 1/3 c
    14 ounce can sweetened condensed milk
  • 2 Tbsp
    butter
  • 1/2 tsp
    salt
  • 1/2 c
    chopped nuts
  • 1 tsp
    vanilla

How To Make chocolate filled oatmeal bars

    Cream butter and brown sugar in large mixer bowl until light and fluffy. Add eggs and vanilla; beat well. Combine oats, flour, baking soda, and salt; stir into creamed mixture. Spread 2/3 of the mixture in greased 15 1/2x10 1/2x1 inch jelly roll pan.

    Prepare Chocolate Filling: Combine chocolate chips, sweetened condensed milk, butter, and salt in medium saucepan; cook over low heat, stirring constantly, until chips and butter are melted and mixture is smooth. Stir in nuts and vanilla.

    Spread evenly over oatmeal mixture in pan. Spoon small dollops of remaining oatmeal mixture evenly over top. Bake at 350 for 25-30 minutes or until golden brown. Cool; cut into bars.
