I love bar cookies- they are so easy and you get all the goodness of a gooey cookie! These are a result of combining a couple of our favorite bar cookie recipes. They are always a hit at get togethers and BBQ's! I have sensitivity to peanut butter so I use Trader Joe's Cookie Butter or Biscoff instead of peanut butter- all of them work well in this recipe. It take a couple of steps to get these just right but I think you will love the result!

Ingredients For chocolate chip peanut butter cheesecake bars

  • BASE LAYER
  • 1 stick
    butter, softened
  • 1/2 c
    sugar
  • 1/3 c
    brown sugar, lightly packed
  • 1/2 c
    peanut butter, biscoff or cookie butter
  • 1
    egg
  • 1 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1/2 c
    rolled oats
  • 1 1/2 c
    chocolate chips (milk, dark semi-sweet or a combo)
  • CHEESECAKE LAYER
  • 8 oz
    cream cheese, room temperature
  • 1/3 c
    sugar
  • 1
    egg
  • 1/2 tsp
    vanilla extract

How To Make chocolate chip peanut butter cheesecake bars

    Preheat oven to 325 degrees. Prepare a 9 X 9 inch pan with cooking spray.

    Cream the butter, sugars, and peanut butter until smooth and fluffy. Add the egg and beat until incorporated.

    In a separate bowl, mix the flour, baking soda, and salt. Slowly add the flour mixture in with the butter and sugar, mixing well after each addition. Stir in the oats and chocolate chips.

    In a medium size bowl cream the cream cheese, egg, sugar, and vanilla until smooth.

    Press two-thirds of the cookie dough in the pan. Pour the cheesecake filling over the dough. Crumble the remaining dough and sprinkle over the top.

    To keep theses moist, cover with foil and bake for 20 minutes; remove foil and bake for another 15-20 minutes, or until tops is lightly browned and cheesecake layer is set. Store leftover bars in an air tight container in the refrigerator.
