chocolate cherry thumbprint cookies
The secret to these great cookies is the oatmeal and the melted chocolate chips. Being my husband's favorite cookies from his childhood, I have perfected the recipe since my mother in law gave it to me years ago. A few little tips on melting chocolate and how to drizzle it on without a mess may be helpful to others! Use a cup to hold your plastic bag in place and scrape the chocolate easily into it. If you do not have a pastry bag, a simple baggie will do. Just cut a tiny piece of the end off and use it to squeeze the chocolate onto the cookies... much easier than the original splatter

These cookies are a chocolate lovers dream cookie! Adding melted chocolate to the cookie intensifies the flavor. Soft and chewy, I'm reminded of a chocolate covered cherry with each bite. We know we eat with our eyes first, and creating a thumbprint cookie with the cherry in the middle is adorable. Drizzling chocolate across the top, makes you want to take a big bite. I can tell why these are a crowd pleaser. They're easy to make and packed with chocolaty goodness!
Ingredients For chocolate cherry thumbprint cookies

3/4 csugar

2/3 cbutter (1 stick plus 3 tablespoons)

2eggs

1 tspvanilla

2 cchocolate chips (divided)

2 coatmeal, uncooked

1 1/2 cflour

1 tspbaking powder

1/4 tspsalt

1 jarmaraschino cherries, 8 oz.
How To Make chocolate cherry thumbprint cookies

1Cut butter into pats and beat with electric mixer until creamy, then add sugar.

2While butter is mixing drain cherries and cut each in half.

3Beat sugar and butter till blended then add eggs and vanilla. Beat till smooth.

4Mix in dry ingredients.

5Melt 1 cup chocolate chips in 30 second intervals at half power in a glass bowl in the microwave till smooth and creamy.

6Add melted chocolate to cookie dough and mix well.

7Using a small cookie scoop make evenly sized cookies and place on parchment paper lined cookie sheets.

8Using your thumb make an impression and fill with half a cherry.

9Bake at 350 degrees for 10 minutes and allow to cool on the cookie sheet before transferring to wax paper.

10When cookies cool, melt remaining cup of chocolate chips in the microwave then transfer to a pastry bag and drizzle onto each cookie.
