Ingredients For chocolate cashew coconut bars

  • 1 1/3 c
    all purpose flour
  • 1/2 c
    packed dark brown sugar
  • 1/2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 3/4 c
    unsalted butter, cubed, divided
  • 1 2/3 c
    10 ounces finely chopped bittersweet chocolate
  • 3/4 c
    whipping cream
  • 1/2 c
    sugar
  • 1 tsp
    vanilla
  • 2
    eggs
  • 1 1/2 c
    flaked coconut
  • 1 1/2 c
    chopped cashews

How To Make chocolate cashew coconut bars

    Preheat oven to 350. Grease 13x9 inch baking pan. Whisk flour, brown sugar, baking powder, and salt in medium bowl; cut in 1/2 cup butter with pastry blender or two knives until mixture resembles coarse crumbs. Press into bottom of prepared pan. Bake 10 minutes or until set. Cool pan on wire rack.

    Place chocolate in medium bowl. Bring cream to a simmer in small heavy saucepan over medium low heat. Pour over chocolate. Let stand 5 minutes; stir until smooth. Pour over crust. Refrigerate 15 minutes or until set.

    Beat remaining 1/4 cup butter in medium bowl with electric mixer at medium speed until light and fluffy. Add sugar and vanilla; beat until blended. Add eggs, one at a time, beating well after each addition. Fold in coconut and cashews. Spoon topping evenly over filling; gently spread over surface. Bake 25 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars.
