This recipe was developed by Sherry Bussa. I got it from her Weight Watchers site. (5 Points Value per serving) This is exactly how she wrote it. I had to make some slight modifications that I will post later. Not only are they healthy but they taste great. Hope you enjoy them too.

2 czucchini, uncooked

2 call purpose flour

2 cpowdered sugar

1 1/2 csugar substitute
-
2/3 capplesauce, unsweetened

1/2 cwalnuts
-
1/2 cchocolate chips, semisweet
-
1/2 cgreek yogurt, plain fat-free
-
1/4 cegg whites
-
1/4 clight butter
-
1/4 calmond milk, plain unsweetened

1 mdbanana, mashed
-
1 ozinstant espresso
-
1 Tbsphoney
-
1/4 Tbspcocoa powder, unsweetened

2 1/2 tspvanilla extract
-
1 1/2 tspbaking soda
-
1/2 tspchili powder
-
1/2 tsptable salt
How To Make rich fudgy zucchini brownies with frosting

1Preheat oven @ 350 degrees F. Spray a 9 x 13 baking dish with baking spray.

2In a bowl, mix together applesauce, sugar and vanilla.

3In a separate bowl, mix dry ingredients: flour, cocoa powder, baking soda & salt.

4Fold in zucchini, chocolate chips, yogurt, espresso, honey, chili powder, banana, egg whites & walnuts. If too thick, add water.

5Put mixture in baking dish and bake @ 350 degrees F for 40 minutes. Let cool before frosting.

6Frosting: cream 1/4 cup soft butter with 1/2 cup cocoa powder until smooth. add vanilla. alternate almond milk and powdered sugar until desired consistency. add cocoa mixture, frost brownies.
