Rich Fudgy Zucchini Brownies with Frosting

This recipe was developed by Sherry Bussa. I got it from her Weight Watchers site. (5 Points Value per serving) This is exactly how she wrote it. I had to make some slight modifications that I will post later. Not only are they healthy but they taste great. Hope you enjoy them too.

Ingredients

2 c
zucchini, uncooked
2 c
all purpose flour
2 c
powdered sugar
1 1/2 c
sugar substitute
2/3 c
applesauce, unsweetened
1/2 c
walnuts
1/2 c
chocolate chips, semisweet
1/2 c
greek yogurt, plain fat-free
1/4 c
egg whites
1/4 c
light butter
1/4 c
almond milk, plain unsweetened
1 medium
banana, mashed
1 oz
instant espresso
1 Tbsp
honey
1/4 Tbsp
cocoa powder, unsweetened
2 1/2 tsp
vanilla extract
1 1/2 tsp
baking soda
1/2 tsp
chili powder
1/2 tsp
table salt

Step-By-Step

1Preheat oven @ 350 degrees F.
Spray a 9 x 13 baking dish with baking spray.

2In a bowl, mix together applesauce, sugar and vanilla.

3In a separate bowl, mix dry ingredients: flour, cocoa powder, baking soda & salt.

4Fold in zucchini, chocolate chips, yogurt, espresso, honey, chili powder, banana, egg whites & walnuts. If too thick, add water.

5Put mixture in baking dish and bake @ 350 degrees F for 40 minutes. Let cool before frosting.

6Frosting: cream 1/4 cup soft butter with 1/2 cup cocoa powder until smooth. add vanilla. alternate almond milk and powdered sugar until desired consistency.
add cocoa mixture, frost brownies.
