This delicious recipe came from a friend at Church...She is always requested to make them, and for good reason...they are great! I put my own touch on them...hers only have the chocolate topping, I added the peanut butter, at my sons request. Kids love these...even the big ones...lol! The oat meal gives them a somewhat healthy aspect...or we can at least think so...also, makes them a bit chewy...reminds me a bit of granola... Enjoy! Pictures are mine

Ingredients For peanut butter fingers

  • 1/2 c
    butter, softened
  • 1/2 c
    sugar
  • 1/2 c
    packed, brown sugar
  • 1
    egg
  • 1/2 tsp
    vanilla extract
  • 1/4 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1/3 c
    peanut butter
  • 1 c
    flour
  • 1 c
    oatmeal, quick cook
  • 1 - 12 oz
    package milk chocolate or semi sweet chips
  • PEANUTBUTTER GLAZE - OPTIONAL
  • 1/2 c
    confectioners' sugar
  • 1/3 c
    peanut butter
  • 5 - 6 Tbsp
    cream

How To Make peanut butter fingers

    Preheat oven to 350 degree F. Spray a 9 x 13 baking pan with non stick cooking spray.

    In a medium bowl; mix the butter, sugar and brown sugar together with a mixer until creamy.

    Add the egg, peanut butter, baking soda, salt, vanilla, and flour. Mix until all ingredients are evenly blended.

    Stir in the oatmeal by hand, just until evenly blended

    Scrape the mixture into the greased pan and pat the batter with fingertips, until it is spread evenly onto the bottom of the pan.

    Place in the oven and bake for 20 to 25 minutes. ( mine took 20 minutes )

    Remove from the oven and sprinkle chocolate chips over the bars while they are still hot.

    Allow the chips to sit for 5 minutes, or until soft enough to spread evenly over the top of the bars. If using peanut butter glaze, make it now.

    I mix frosting ingredients together until smooth. Fold down the top of a baggie, add the frosting. Cut a hole on one corner of the bag, and pipe it onto the bars.
