My dad is a huge cookie fan, and he wanted me to create a cookie that was reminiscent of one of his favorite holiday treats - Cherry Cordials. This is what I came up with, and it has turned out to be a VERY popular cookie with family and friends.
Cream together butter and sugar. Blend in egg and vanilla.
Sift together flour, baking powder and salt. Add to butter mixture along with dried cherries, just until blended.
Scoop rounded teaspoonsfull of dough onto a parchment lined baking sheet. Bake at 350° F. for 10-12 minutes, or until lightly golden.
While cookies are baking, melt cherry preserves. In a microwave safe bowl, heat cherry preserves on high for one minute in the microwave. Using an immersion blender, blend the preserves to break up the cherries, or use a fork to mash them.
Stir semi sweet chocolate chips into the hot cherry preserves. Continue to stir until chocolate chips are melted and mixture is smooth.
Remove cookies from oven. Using the back of a spoon, immediately form a shallow well on the top of each cookie. Transfer cookies to a rack to cool.
Spoon chocolate cherry mixture into the wells on top of each cookie.
Melt white chocolate chips in a double boiler, or in a stainless steel bowl set over boiling water. Drizzle white chocolate over filled cookies. Allow to cool completely.
