These are very moist, not so much like cake but like fudgy brownies. So yummy!

Blue Ribbon Recipe

This is a super simple brownie recipe. With a fudgy, chewy center and a crisp outside, these are delicious. The espresso enhances the chocolate flavor and Baileys is subtle, not overwhelming. Just sprinkling a little powdered sugar on top not only made these pretty for presentation but was the perfect final touch. Our only complaint, this only makes an 8x8 pan. They're great!

Ingredients For baileys brownies

  • 1 c
    all-purpose flour
  • 1/2 c
    unsweetened cocoa powder
  • 1 tsp
    espresso powder, instant
  • 1/4 tsp
    salt
  • 1/4 tsp
    baking soda
  • 1/3 c
    (heaping) bittersweet or dark chocolate chips
  • 1/4 c
    butter
  • 2
    eggs
  • 1 c
    sugar
  • 1/3 c
    Baileys Irish Cream
  • 1 tsp
    vanilla

How To Make baileys brownies

    Heat oven to 350. Prepare an 8x8 pan by lining with tin foil and spraying lightly with cooking spray.

    Put chips and butter in a medium microwave safe bowl and microwave on high in 30 second intervals (stirring after each) until chocolate is melted. Set aside to cool.

    Mix flour, cocoa powder, espresso powder, salt and baking soda and set aside.

    When chocolate/butter is slightly cool, add eggs, sugar, Baileys and vanilla.

    Then stir in the dry ingredients.

    Spread mixture evenly into the prepared pan and bake for 18 - 20 minutes, until a toothpick comes out clean.

    When cool, you can dust with powdered (confectioners) sugar, if desired.
