This Christmas I got quite a few cookbooks from my Mom and a friend or two. One of which was a homemade cookbook that he and my sister put together. Strictly of sweet recipes they know I love. Because usually when I crsve something sweet, it's on of their recipes. So my sister put her recipe for Coconut Fudge in there. Which I adoreeee, But no matter how much I love coconut, It always takes me back to Piña Colada, Which made me think If I could turn this into something of the kind. And here is the result! It's creamy, fruity, tropical and so sweet! I hope you enjoy!!

Ingredients For piña colada fudge

  • 2 c
    vanilla or white chocolate chips
  • 1 c
    shredded or desecated coconut
  • 4 Tbsp
    butter
  • 3/4 c
    sweetened condensed milk (about half the 14oz can)
  • 3/4 c
    marshmallow fluff
  • 1/2 c
    dried pineapple coarsly chopped
  • 1/4 tsp
    salt
  • 3/4 tsp
    coconut extract
  • 3/4 tsp
    rum or rum extract

How To Make piña colada fudge

  • 1
    Line an 8x8 pan with aluminum foil and spray with nonstick spray. Make sure foil hangs over edges to allow for easy removal of fudge.

    Melt the chocolate chips in a microwave safe container on medium heat, stirring every 30 seconds, until fully melted and smooth.

    Stir in coconut, butter, sweetened condensed milk, marshmallow fluff, salt, and extracts until well combined.

    Add dried pineapple and stir until evenly distributed.

    Pour fudge into pan and smooth top, Cool in fridge for 3 hours or until set.

    Remove fudge using the foil "handles". Cut fudge into small squares and serve. Store in an airtight container for up to a week. ENJOY :D
