Crispies Peanut Butter Eggs - Delish!

My family loves the crunch in these eggs, combined with the smoothness of the peanut butter, so good! Just in time for Easter...this recipes makes 75 balls or 38 eggs...enjoy!

peanut butter
1/2 c
butter, softened
1 lb
confectioners' sugar
3 c
rice crispies cereal
10 oz
ghiradelli chocolate chips - i used half milk chocolate & half semi sweet
2 Tbsp

1Combine peanut butter, butter and powdered sugar in a bowl. Blend together well.

2Add cereal and blend into peanut butter mixture. I used my hands for this part, to get thoroughly mixed.

3Form into balls or eggs. I used a good tablespoon full for the eggs.

4Chocolate coating:

In a microwave safe bowl; add chips and shortening...microwave for 1 minute, stir...if all of chocolate is not melted, put back into microwave and heat another 30 seconds...

5I use a fork and dunk the eggs; letting the excess chocolate drip off.

Chill to set.
