Ingredients

36 medium
cupcake liners
1 box
cake mix, strawberry
0.5 box
cake mix, butter flavor
16 oz
strawberries, frozen
1/2 c
milk, 2%
1 Tbsp
lemon juice
2 Tbsp
coconut rum
3/4 c
oil
1/2 c
butter, melted
6
eggs
1 c
coconut, grated - optional

Step-By-Step

1Preheat oven to 375* As soon as cupcakes are in the oven, reduce heat to 350*
Bake at 350* for 15-20 minutes
Lightly brown; Toothpick test should be clean

2Puree strawberries and coconut rum
Melt butter
Combine milk and lemon juice

3Combine cake mix and all ingredients except strawberry puree and grated coconut;
Beat on medium until combined.
Add strawberry puree and beat on medium for 2 minutes; no more

4IF grated coconut is desired, fold into batter just before transferring to cupcake liners
