It sort of tastes like a candy apple. I have a few friends that like to can and make preserves. I've been getting apple preserves from people. So some experimenting, and I've got this to offer. It is a pretty good way to use up some apple preserves.

Ingredients For rustic apple preserve cake

  • FOR CAKE:
  • 2 c
    cake flour
  • 1 c
    sugar
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 2 tsp
    pure vanilla extract
  • 1/2 c
    apple preserves
  • 1/2 tsp
    cinnamon
  • 1/2 c
    heavy cream
  • 3 lg
    eggs, room temperature
  • 1/2 c
    unsalted butter, room temperature
  • TOPPING:
  • 1 c
    unsalted butter, room temperature
  • 1 tsp
    pure vanilla extract
  • 1 pinch
    salt
  • 3 c
    confectioners' sugar
  • 2 tsp
    heavy cream
  • 2 Tbsp
    apple preserves
  • 1/2 tsp
    cinnamon
  • GARNISH:
  • cinnamon

How To Make rustic apple preserve cake

    Preheat oven to 350'F Greese, flour and line a 9 inch round cake pan with parchment paper. Set aside.

    In a large mixing bowl, sift flour, baking powder, salt and cinnamon together. Set aside.

    In a measuring cup, combine heavy cream and vanilla together. Set aside.

    In a large mixing bowl, cream butter and sugar together.

    Beat eggs into butter/sugar mixture, one egg at a time. Beat in apple preserves until completely incorporated.

    Gradually add flour mixture and heavy cream mixture to the butter/egg batter. Alternate between adding flour and heavy cream, starting and ending with flour. To clarify, you should add half the flour mixture, beat loosely to combine, add all the cream, beat to combine, then add the rest of the flour, then beat again loosely to combine. Do not over beat batter; just beat enough that all ingredients are complete combined.

    Pour batter out into cake pan. Bake for about 40 minutes, or until a toothpick comes just barely clean. Cool for 20 minutes on a wire wrack. Remove from pan, and cool completely before frosting.

    For topping: Beat butter, apple preserves, salt, and vanilla together until completely incorporated. Gradually add confectioners' sugar, until completely incorporated and fluffy. Beat cinnamon and heavy cream in. Add more or less cream to adjust thickness. Top cake as desired. Garnish with cinnamon if desired.
