Ingredients

1/2 c
vegetable oil
3 large
eggs
1 c
brown sugar (divided)
1 c
sugar
1 1/2 c
100% pumpkin puree
1 Tbsp
vanilla
3 c
flour
1 tsp
baking soda
1 Tbsp
pumpkin pie spice
1 tsp
salt
1 tsp
baking powder

FOR TOPPING

1 stick
melted butter
1 c
brown sugar
2
peeled, sliced, and cored granny smith apples

Step-By-Step

1Preheat the oven to 350ยบ.
2Place 1 cup of brown sugar and melted butter in bottom of a 9 x 13 baking pan. Mix well making sure to dissolve the brown sugar.
3Arrange apple slices 3 across and 5 down inside the pan.
4Set pan aside to prepare cake.
5Combine oil, brown sugar, granulated sugar eggs and vanilla in bowl of mixer until light and creamy.
6Add in pumpkin & blend to combine.
7In a separate bowl combine dry ingredients and whisk to incorporate.
8Add dry ingredients gradually to the wet mixture until fully incorporated.
9Pour batter over the apples and brown sugar in the prepared baking pan, spreading evenly.
10Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
11Remove from oven and invert onto a baking tray. Allow to cool completely before serving.
