~ Perfectly Spiced Apple Cake ~

This is a recipe, my preachers wife ( Linda ) shared with me. All I had to do was buy the cardamom, which my daughter bought me a large bottle for Christmas. I couldn't wait to make this cake. She brought it to Church over a year ago, and everyone loved it.

apples, peeled and sliced, about 1/2 inch thick

Step 1 Direction Photo

1Preheat oven to 375 degree F. Spray a 9 inch cake pan or I used a deep dish pie plate,( Linda makes hers in an iron skillet ) with nonstick cooking spray.

In a skillet or saucepan, melt 6 tablespoons butter, add brown sugar and molasses, stirring until smooth. Let simmer for a few minutes.

2Pour mixture into bottom of prepared cake pan.

Peel apples and slice. Overlap in a circle, staring on the outer inside edges of pan and fill in the center. Sprinkle with a little cinnamon and set aside.

Heat milk and remaining 2 tablespoons butter in a saucepan. Keep warm.

3In a small bowl whisk together the flour, salt, cardamom, cinnamon, ginger, cloves and baking powder.

4Beat eggs for 3 - 4 minutes or until pale yellow and thickened.

5Slowly add sugar and beat for about 5 minutes.

6Add the dry ingredients, mix until smooth, then add the milk and butter mixture. Beat until smooth.

7Pour batter over the apples and bake for approx 40 minutes or until pick comes out clean.

8Let cool for 10 - 15 minutes, take a slender knife and go around the inside edges of pan. Place serving plate over the pan and flip upside down.

9Can serve warm or leave finish cooking. Great with whipped cream or ice cream. Enjoy!
