heat oven to 325 degrees. Lightly grease cake pans. Set aside.
Beat together oil, sugar and eggs in a large bowl. Add the flour, baking soda, salt and cinnamon. Stir well. Add the carrots and the vanilla. Add the dates and nuts if using. Stir well.
Pour into greased pans and bake for 50-60 minutes or until toothpick inserted comes out clean. Frost with a cream cheese icing
