This is my husband's grandmother's (Minnie McCoy Whitehead) recipe for Lane cake It came from her mother,but we don't know her name they are direct descendants form the Hatfields and McCoys,she was born in 1899 in West Virginia. We have been trying to find this recipe in my mother-in-laws cookbooks and her recipe box. She was bad about sticking stuff every where.My sister-in-law found it in her mother's Bible at church this morning. My MIL passed in 1992, and she just found it

Ingredients For lane cake

  • 1 1/2 c
    butter
  • 4 c
    sugar
  • 3 1/2 c
    flour sifted
  • 3 tsp
    baking powder
  • 1 c
    milk
  • 2 tsp
    vanilla extract
  • 2 tsp
    8 eggs separated
  • 1 c
    raisins chopped
  • 1 c
    nuts chopped your choice
  • 1 c
    coconut
  • 1 c
    wine or bourbon

How To Make lane cake

    CAKE:

    cream one cup butter and 2 cups sugar together until fluffy and light

    sift flour with baking powder
  • 4
    add flour mixture with creamed mixture alternately with milk mixing on med, add one tsp. vanilla

    beat egg whites until stiff. fold into cake batter,DO NOT STIR FOLD

    spread into cake pans evenly

    grease and flour 3 - 9" cake pans. Bake on 350 20-30 min until springs back and golden brown

    use half of wine or bourbon on cake layers,brush each layer after stacking.

    beat egg yolks slightly. add remaining sugar and butter,

    cook in double boiler until thick,stirring constantly. add raisins,nuts,and coconut.stir in remaining vanilla and wine

    spread filling thickly between layers of cake and on top and sides.

    she would wrap the cake in 2-3 layers of tin foil and refregirate for 3 days before serveing,you didn't dare try to look at it. so,so good
