I don't have a source for this. I had it written on notebook paper. There are a lot of good cakes & pies, that originated in Kentucky. If you aren't used to bourbon or other alcohol, in your desserts or other foods, you might want to start off, with less alcohol; maybe a quarter cup to less from each bourbon listed. Bourbon, in particular, can be pretty strong. To replace the reduced bourbon liquid, see suggestions, in ingredient list.

Ingredients For kentucky bourbon cake

  • 4 c
    sifted all-purpose flour or unbleached all-purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    butter, softened
  • 2 tsp
    vanilla extract
  • 6 lg
    eggs
  • 1 lb
    confectioners' sugar, sifted
  • 3/4 c
    kentucky bourbon (whiskey)*
  • 2 c
    chopped pecans
  • 1 c
    kentucky bourbon (whiskey)*
  • extra confectioners' sugar for dusting top of cake
  • *to make the bourbon a milder flavor, reduce each amount of bourbon by 1/4 cup or more, depending on preference. substitute apple juice or white grape juice for the most subtlety; could sub-in orange juice for the missing bourbon, for more flavor.

How To Make kentucky bourbon cake

    Preheat oven to 325°F. Grease and flour a 10 x 4 inch tube pan.

    In a bowl, sift flour, with baking powder and salt.

    In a large mixing bowl, cream butter, until very fluffy and almost white. Gradually, beat in the 1 pound (lb.) of confectioners' sugar. Stir in vanilla ext. Add eggs, one at a time, beating well after each addition.

    Add dry ingredients to wet mixture, alternately with 3/4 cup bourbon, beginning and ending with dry ingredients. Fold in pecans. Pour mixture, into prepared pan.

    Bake cake 1 1/2 hours, or until firm to the touch. Cool cake in pan 15 minutes; then, unmold onto rack.

    While cake is warm, spoon the 1 cup of bourbon slowly over it, allowing it to soak in. Cool thoroughly, before slicing. Serve dusted with confectioners' sugar. Makes one 10 inch tube pan cake.
