This cute little cake was made in 30 minutes, with a store bought Angel Food cake...my sister asked me to make a cute cake for my 2 year old Niece for Easter...this was my trial run. I thought I'd share it, for those who have little ones, that might enjoy putting one of them together...my sister can't wait to deliver this one to her Granddaughter... My photos

Ingredients For easter cake made easy

  • 1
    angel food cake- fresh made or store bought
  • 1 can
    white frosting
  • food
    coloring, your choice
  • 3/4 - 1 c
    coconut
  • green
    food coloring for grass
  • candy
    eggs for nest
  • canning
    jar lid, or i used tin lid from frosting
  • foil wrapped eggs, marshmallow ducks, bunnies etc for decorating

How To Make easter cake made easy

    Mix frosting in a medium mixing bowl with food coloring to reach your desired color. I used blue.

    Place the cake on a cake platter and spread a thin layer of frosting over the sides of cake. I placed 4 sheets wax paper under edges of cake, for a less messy plate. Allow crumb coat to set for 10 minutes.

    Meanwhile, in a small mixing bowl, stir together the coconut with the green food coloring until it is all combined and all of the coconut is dyed. Set aside.

    Place a large flat lid from a canning jar or I used the tin lid from the frosting can over the hole in the center of the cake.

    Spread a second layer of frosting, this time over the entire cake. Try to keep this layer consistent in thickness and smoothness over the surface. ( Spread right over the lid also.)

    Using the tynes of a fork, start at the top of the cake and scrape a one-inch section through the frosting going down. Then, right next to that, scrape a one-inch section going sideways. Continue this pattern across the entire side of the cake to create a pattern that resembles a basket weave.

    Place the coconut on the top center of the cake to make a "nest." Place the malted milk balls into the nest. These will be the "eggs." Place chicken Peeps or other marshmallow characters on the outside of the nest. Next, line the bottom of the cake with jelly beans or foil chocolate eggs.
