This is an easy cake to make. Baking time is only 15 minutes. I love the combination of chocolate and cherry, or chocolate and Stawberry together. I combined the cake with a whipped cream frosting and a pudding cream cheese layer. I gave the option of making the cake with a fresh strawberry filling or a canned cherry pie filling. This is a really delicious cake. It is creamy and decadent. It is also a delicious ending to any meal. We love it. I hope you enjoy it as well!

  • 1/2 c
    granulated sugsr
  • 3
    eggs seperated
  • 1/2 c
    water
  • 1 Tbsp
    instant coffee
  • 1 tsp
    vanilla extract
  • 1 c
    semi sweet chocolate chips
  • 2 Tbsp
    canola oil
  • 3 Tbsp
    unsweetened cocoa
  • 3/4 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 tsp
    salt
  • CREAMY WHIPPED FROSTING
  • 8 oz
    softened cream cheese
  • 1/2 c
    powdered sugar plus 3 tablespoons
  • 1 tsp
    vanilla extract
  • 2 c
    heavy whipping cream
  • PIE FILLING
  • 21 oz
    can cherry pie filling
  • OPTIONAL FILLING
  • 3/4 c
    optional strawberry jelly heated
  • 1 lb
    sliced strawberries or more.
  • NOTE: YOU CAN ALSO MAKE THIS AN ALL WHIPPED CREAM CAKE. JUST OMIT PUDDING FILLING. DOUBLE THE WHIPPED CREAM RECIPE.
  • NOTE: TO SAVE TIME. I PREPARE THE PUDDING MIXTURE AND WHIP CREAM MIXTURE AHEAD OF TIME AND REFRIGERATE.

    cream cheese
  • 1
    package instant vanilla or cheesecake pudding
  • 1 c
    milk
  • 8--12 oz
    container cool whip

    Heat oven to 350°. Line a 10x15 inch dheet pan with parchment paper. Grease and flour it paper snd set aside. Sift flour, baking soda, baking powder,salt and cocoa in a bowl and Set aside.

    In another bowl. Beat egg yolks and sugar together until fluffy. Mix in the oil. Melt chocolate chips over boiling water in in a stainless steel bowl or double boiler. Mix until melted. Mix coffee with water and vanilla. Add coffee mixture to egg mixture. Mix well. Mix in melted chocolate a little at a time until well mixed.

    Mix in the flour mixture to chocolate mixture. Using clean beaters. Beat the egg whites to soft peaks. Fold them gently in to batter. Fold until no egg white shows. Place batter in lined pan and bake at 350 for about 10-12 minutes or until pick comes clean. Do not overbake.

    When cake is done. Place on rack to cool. When cool. Lift cake by paper carefully from sheet pan. as not to crack it. Cut cake in half down the center. Including paper. Trim outer sides of cake with knife. Invert one of the pieces on a platter or dish. Remove paper. Make cheese pudding filling.

    Cream Filling. Beat the Vanilla pudding with milk until it is thickened. Let set to thicken. Mix the softened cream cheese in a large bowl.Whip it until smooth. Add the cool whip to the cream cheese. beat until incorporated. Add the pudding you mixed in to the cream mixture,and beat. Ready to use!

    Note: Double recipe for full whipped cream cake. Make ahead whipped frosting. In a bowll beat cream cheese, vanilla and 1/2 c powdered sugar until smooth. Set aside.

    In another bowl beat whipping cream 3 TB powdered sugar until stiff peaks. Fold beaten cream in to cheese mixture. Keep refrigerated until needed.

    If using strawberries. Heat jelly and microwave until nearly all melted. Set aside to cool. Mix the strawberries with the jelly after it cools. Get half the cake that you cooled. spread cake with Cherry filling or strawberries. reserving a 1/3 a cup of filling. Spread pudding filling Over fruit center layer of cake, and sides of cake.

    Top Fruit and pudding mixture with next layer of cake. Frost with whipped cream. Garnish with fruit and shaved chocolate if desired. Keep refrigerated. Serve the same day or it should be okay up 2 Days in refrigerator. Slice and serve.
