A true coffee lovers delight...I love coffee, it's an all day ritual for me...I put a few tried and true recipes of mine together and this delicious cake was born... Nothing better to wake up to than a nice hot cup of coffee and a moist piece of coffee cake, filled with a decadent coffee butter cream filling?...If you love coffee, or even if you don't... you'll love this cake...I topped it off with some chocolate sprinkles...Yum! Take this to your next Church breakfast or anytime of the day, gathering...they'll love you for it!! All photos are mine

Ingredients For coffee lovers delight cake - cassie

  • 2 Tbsp
    instant coffee
  • 1/3 c
    half and half or milk
  • 1 c
    flour
  • 3/4 c
    sugar
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 2
    eggs, beaten
  • 1 1/2 tsp
    vanilla extract
  • 1 stick
    melted butter or 8 tablespoons
  • FILLING
  • 3/4 Tbsp
    each - instant coffee - water - vanilla extract
  • 12 Tbsp
    softened butter
  • 1 1/2 c
    confectioners' sugar
  • 1 Tbsp
    milk, if needed
  • chocolate
    sprinkles for garnish - optional

How To Make coffee lovers delight cake - cassie

    Preheat oven to 350 degree F. Spray a 8.5 inch loaf pan with non stick cooking spray. Or grease and flour. Set aside. Dissolve coffee into the milk. Set aside.

    In a medium sized mixing bowl; sift the sugar, flour, salt and baking powder.

    In a small bowl, lightly beat eggs and add vanilla extract.
  • 4
    Add the eggs, melted butter and coffee mixture to the dry ingredients and beat until well blended.

    Pour into prepared pan. Bake for 35 - 40 minutes or until pick inserted comes out clean. Cool for about 10 minutes, then turn out onto a rack to finish cooling completely.

    Make your filling when cake is almost completely cool. Add the coffee to the water and vanilla and completely dissolve.

    Beat butter in a medium bowl with a hand mixer until fluffy, about 2 minutes. Gradually beat in the powdered sugar. Add the coffee mixture and beat until blended well. If too thick for you, beat in milk until you reach desired consistency.

    Cut cake in half horizontally and spread half the cream on the bottom half of the cake. Place the top of cake over the filling.

    Spread remaining butter cream on top of the cake and sprinkle with chocolate sprinkles or some other pretty garnish...I picked chocolate as it goes so well with coffee... Enjoy!
