Coconut Cake

This is one of my favorite cakes.It is moist and delicious.It makes a large cake. I use white cake mix as I think it makes a lighter cake.
Use as much coconut to cover the cake,I usually buy a bag of coconut and always have some leftover.I found this recipe many years ago on the back of a can of Coco Lopez cream of coconut.By the way,cream of coconut can be found on the liquor aisle in the store.
I make this cake for Christmas ever year without fail.

Ingredients

1 box white or yellow cake mix
1/4 c. vegetable oil
3 eggs
8 oz carton sour cream
1 can (8 1/2 oz) coco lopez cream of coconut

FROSTING

8 oz. cream cheese
1 pound powdered sugar
2 tablespoons milk
1 teaspoon vanilla
coconut

Directions Step-By-Step

Mix all ingredients with electric mixer 2 mins.Bake in greased 9"x13" pan or 3 9 "round pans at 350 degrees for 30 minutes.

For Frosting: Blend powdered sugar into softened cream cheese.Add milk and vanilla. Spread between cake layers,sides and top.
Sprinkle coconut over the top and sides of cake.
