Ingredients For chocolate ricotta cheesecake

graham crust (below)

3 cricotta or low fat cottage cheese

1 csugar

4eggs

1 cheavy or whipping cream

1/8 tspsalt

1/3 cunsweetened cocoa

1/4 call purpose flour

1/2 tspvanilla

glazed fruit (below)

sweetened whipped cream (optional)
How To Make chocolate ricotta cheesecake

1Prepare Graham Crust: Combine 1 cup graham cracker crumbs, 2 tablespoons sugar, and 1/4 cup melted butter. Press mixture onto bottom and 1/2 inch up side of 9 inch springform pan. Bake at 350 for 8-10 minutes; cool. Set aside.

2Place ricotta or cottage cheese, sugar, and eggs in food processor or blender container; process or blend until smooth. Add heavy or whipping cream, salt, cocoa, flour, and vanilla; process until smooth.

3Pour into prepared crust. Bake at 350 for about 1 hour and 15 minutes or until set. Turn off oven; open door and let cheesecake remain in oven 1 hour. Cool completely; chill thoroughly.

4Prepare Glazed Fruit: Stir about 1 cup sliced nectarines or peaches, pitted sweet cherries, fresh blueberries, strawberries, and/or canned pineapple chunks with 1/4 cup fruit preserves until fruit pieces are well coated. Just before serving, arrange Glazed Fruit on top of cheesecake. With pastry tube, make a border of sweetened whipped cream around edge.
