I made some small changes to this recipe, that I found on a loose page that fell out of a cookbook my mom bought me at an estate sale. Well, let me tell you, IT'S AWESOME! My family loves it. So moist and not over powering of chocolate. The frosting is absolutely perfect for this cake. I added some Kahlua to mine. Just wonderful! I added the addition of the chocolate syrup as well...it compliments the frosting wonderfully! If you're not a coffee fan, just add milk to the frosting. I hope you try it sometime...I'm very happy I found this recipe. It will be made over and over.

  • 1 1/2 c
    boiling water
  • 1 c
    quick cooking oats
  • 1 1/4 c
    semi sweet chocolate chips
  • 1/2 c
    softened, butter
  • 3/4 c
    each ~ sugar & firm packed brown sugar
  • 2
    eggs
  • 1 1/2 c
    flour
  • 1 tsp
    each ~ baking soda & salt
  • FROSTING
  • 1/2 c
    softened, butter
  • 1 tsp
    vanilla extract or kahlua
  • 1/8 tsp
    salt
  • 4 c
    confectioners' sugar
  • 1/4 c
    water, heated
  • 2 tsp
    instant coffee
  • chocolate
    syrup - optional

    Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a medium bowl, add oats and chocolate chips. Pour the boiling water over oats and let set for 20 minutes. Don't stir.

    In a large bowl, cream butter and sugars until fluffy. Add one egg at a time, beating well after each addition.

    Beat in the oatmeal mixture. Combine flour, baking soda and salt. Beat the flour mixture into the oatmeal mixture until well blended.

    Spread evenly into prepared baking dish.

    Bake for 30 - 35 minutes or until pick comes out clean. ( mine took 30 minutes ) Cool on rack. Make frosting while cake is cooling.

    Frosting: Dissolve coffee into warm milk and set aside. In a medium mixing bowl, beat butter until creamy. Beat in vanilla and salt. Gradually beat in confectioners’ sugar until smooth. Beat in enough of the coffee mixture to achieve spreading consistency.

    I drizzle with Hershey's syrup which complimented the frosting wonderfully!
