It's blueberry time. I got some this week at the store and was thinking about muffins, bread, and jam. Then it popped into my head what about a cake? So here is my recipe I made for a blueberry cake with a vanilla butter sauce... Mmmm tasty. Enjoy!

Yumaroo, this is a very moist blueberry cake. There's a slight crunch on the top and the vanilla butter sauce is wonderful. Not only will we use the sauce on this recipe, but it can also be added to recipes too. Delish!

Ingredients For blueberry cake with vanilla butter sauce

  • 1/4 c
    butter, softened
  • 1 c
    sugar
  • 2 lg
    eggs, beaten
  • 1 c
    all-purpose flour, plus more for dusting berries
  • 1 tsp
    baking powder
  • 1/4 c
    milk
  • 1 1/2 c
    fresh or frozen blueberries
  • FOR THE SAUCE:
  • 1/4 c
    butter, softened
  • 1/2 c
    sugar
  • 1 lg
    egg yolk, well beaten
  • 1/4 c
    boiling water
  • 1 tsp
    vanilla (or to taste)

How To Make blueberry cake with vanilla butter sauce

  • Creaming butter and sugar.

    Cream butter and sugar.
  • Eggs mixed in.

    Stir in eggs.
  • Sifting flour and baking powder together.

    Sift flour and baking powder together.
  • Adding milk and dry ingredients.

    Add to creamed mixture alternately with milk; beating well.
  • Coating blueberries in flour.

    Coat blueberries with a small amount of additional flour to assure even distribution of berries in cake (about 1 1/2 Tbsp).
  • Folding blueberries into the batter.

    Fold into batter.
  • Greasing a baking dish.

    Lightly greased 8- or 9-inch square pan.
  • Batter poured into the baking dish.

    Pour batter into the pan.
  • Blueberry cake after it has baked.

    Bake at 350 degrees for 30 minutes.
  • Water boiling in a saucepan.

    NOTE: If you don't have a double boiler, you can use two pans that fit together. Put about 1-2 inches of water in the bigger pot, get it to boil, and then proceed with this recipe.
  • Butter and sugar in a bowl over boiling water.

    To prepare sauce: Mix butter and sugar in top of a double boiler.
  • Egg yolk ready to be poured in.

    Blend in egg yolk and boiling water.
  • Stirring the sauce.

    Stir vigorously while blending the egg yolk in the boiling water so the egg does not cook in the mixture.
  • Cooked until mixture thickens.

    Cook over hot water until mixture thickens, stirring frequently (about 15 minutes on medium heat).
  • Adding vanilla extract to the sauce.

    Stir in vanilla.
  • Spooning sauce over the blueberry cake.
