A friend of mine's grandmother shared this recipe with me for brownie mix. Its great because it keeps a lot longer than brownie mixes which incorporate butter or shortening into the mix. It makes the richest, darkest, chocolatiest brownies I've ever had. So simple, just store the powdered mix away in a container and when your sweet tooth kicks in or the chocolate monster is nagging in your ear, mix with the wet ingredients, bake and voila! Delicious brownies!
To make the brownie mix: In a large bowl, sift together flour, baking powder and salt. Add in sugar and cocoa. Blend well, until evenly distributed. Place mix in an air tight container and store in a cool, dry place. This mix will keep for a long time!
For the brownies: Preheat the oven to 350 degrees. Spray an 8x8 pan with cooking spray.
In a medium bowl, combine 2 1/2 cups brownie mix with oil, eggs, vanilla and water and wisk together with a fork until dry ingredients are moistened.
Pour into a square pan and spread evenly. Bake at 350 for 25 minutes or until done in the center. Double the brownie recipe for a 9x13 pan and bake for 28-30 minutes.
