Best Darn Strawberry Shortcake
- 1 - 1 1/2 lb
- or 2 - 21/2 cups strawberries, cleaned and sliced
- 1/2 - 3/4 c
- confectioners' sugar
- 2 c
- 4 tsp
- baking powder
- 1 Tbsp
- 1/2 tsp
- 5 Tbsp
- cold butter, sliced into pats
- 3/4 c
- 1 c
- heavy whipping cream
- 1 tsp
- 1 Tbsp
MAKE SURE YOU LET THE STRAWBERRIES SIT IN THE SUGAR LONG ENOUGH TO MAKE THOSE YUMMY JUICES
Spray a 9 inch pie plate with nonstick cooking spray or grease. Set aside.
Place flour, salt, sugar in food processor.. Pulse until mixed. Add the 5 tablespoons of butter and pulse until resembles coarse crumbs. Pour into a medium sized mixing bowl.
Stir together flour, salt and sugar. Cut in butter with pastry cutter or two forks, cut butter into flour mixture until it resembles coarse crumbs.
Pour out onto a lightly floured surface. Knead, 2 - 3 times, until all comes together.
Using a handheld or standing mixer, whip heavy cream 1 tablespoon sugar and vanilla until medium peaks form. ( About 5 minutes )
