Ingredients

CAKE:

1 1/2 c
mashed, ripe bananas
2 tsp
lemon juice
3 c
flour
1 1/2 tsp
baking soda
1/2 tsp
salt
3/4 c
butter, softened
2 1/8 c
sugar
3 large
eggs
2 tsp
vanilla
1 1/2 c
buttermilk

FROSTING:

1/2 c
butter, softened
1
8 oz. pkg. cream cheese
1 pinch
salt
1 tsp
vanilla
3 1/2 c
powdered sugar
chopped walnuts to garnish, optional

Directions Step-By-Step

1
Preheat oven to 275 degrees. Grease a 9"x13" pan. Mix mashed banana with lemon juice and set aside.
2
In medium bowl, blend flour, baking soda and salt and set aside.
3
In large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla. Start to mix in the flour mixture alternately with the buttermilk. Stir in the banana mixture by hand.
4
Pour into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean. Do not over-bake. Remove from oven and place directly into the freezer for 45 minutes. (Don't skip this step... this is important.)
5
For frosting, cream butter and cream cheese . Add remaining ingredients and beat on high until light and fluffy. Spread on cooled cake. Garnish with chopped nuts, if desired.
