apple pecan streusel cake

I went apple picking,and decided to whip up something a little different. The combination came out excellent. It is a filling spicy apple cake with a little lighter touch added. I also included my Cream cheese frosting as another option. This is my favorite Apple cake. Enjoy!

Ingredients For apple pecan streusel cake

  • 3 c
    all purpose flour
  • 1 Tbsp
    pumkin pie spice
  • 1 tsp
    cinnamon
  • 1/2 tsp
    allspice
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 c
    light brown sugar
  • 1 c
    granulated sugar
  • 3
    eggs
  • 3/4 c
    canola or vegetable oil
  • 3/4 c
    apple sauce
  • 4
    chopped apples
  • 3/4 c
    toasted pecans chopped
  • STRUESEL
  • 1/2 c
    brown sugar
  • 1/4 c
    granulated sugar
  • 1/3 c
    butter
  • 1 tsp
    cinnamon
  • 3/4 c
    flour
  • pecan halves for top not toasted
  • FROSTING
  • 1 pkg
    8 ounce cream cheese
  • 3/4 c
    powdered sugar
  • 1 tsp
    butter pecan extract,or vanilla
  • 1/2 c
    heavy cream
  • CREAM CHEESE FROSTING
  • 1/2 c
    butter
  • 8 oz
    cream cheese
  • 1 tsp
    vanilla
  • 1 box
    powdered sugar (1 pound)

How To Make apple pecan streusel cake

    heat oven to 350 degree's. Grease and flour to round cake pans. Toast half the pecans and chop.

    mix all of the dry ingredients together for the cake in a bowl. mix thoroughly. In a large separate bowl beat sugars with the eggs and oil until blended. Mix in the applesauce and vanilla.

    Add flour mixture to egg mixture a little at a time while beating on low. Beat until combined well. Fold in t and pecans. Divide batter between both pans. Tap pans slightly on counter to level mixture.

    Make Streuesel by combining all ingredient until it makes crumbs. Top one cake with streusel. Press Pecan halves slightly in to top with streusel in a circular pattern. Bake cakes at 350 degree's about 40 minutes . or until pick comes out clean. Cool cakes.

    cream frosting: beat cream cheese,extract and sugar together until fluffy. In another bowl beat the cream until stiff peaks. Add whipped cream to cream cheese mixture. Beat on low just for 20 seconds or until combined. Do not over beat. Cream cheese frosting: soften butter. Beat butter and cream cheese together. Add sugar and vanilla. Beat until smooth.

    invert cake without streusel on to plattter. frost sides and top of cake. Invert streuel topped cake on a platter. Flip over to Streusel side. Place on top of other layer,and frost sides of cake. Ready to serve. Keep refrigerated.
