This is an easy delicious soft banana bar with banana frosting or glaze. I named this recipe Yummy Banana Bars because they are..lol...but I got the recipe(and the pic) off of allrecipes and have been making them for years. I tweaked it by adding more banana and more powdered sugar. I like things with vivid flavor. Since they go fast in my house, I usually double the recipe and bake them in a 12"x18" cookie sheet with 3/4" sides. I have also made then in mini and regular sized muffin tins. You will love these if you love banana.

Ingredients For yummy banana bars

  • 1/2 c
    butter, softened
  • 1 c
    sugar
  • 1/2 c
    milk
  • 1 tsp
    vanilla extract
  • 1 tsp
    lemon juice
  • 1 1/2 c
    unbleached white flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 1/2
    very ripe bananas, mashed
  • 1/2 c
    walnuts or pecans, finely chopped (optional)
  • GLAZE:
  • 3 c
    powdered sugar
  • 1/4 tsp
    salt
  • 1/2 tsp
    vanilla extract
  • 1/2 tsp
    lemon juice
  • 1/2
    very ripe banana, mashed
  • 1 Tbsp
    butter, melted

How To Make yummy banana bars

    Preheat oven to 350 degrees. Spray a 9"x12" cake pan with cooking spray. Set aside.

    I mixer bowl, cream butter and sugar together. Stir in vanilla, lemon juice and milk. Stir together dry ingredients in a bowl and add to creamed mixture. Mix until smooth but don't overbeat. Stir in mashed bananas and nuts if desired. Pour batter into prepared pan and smooth out. Bake for 25-30 minutes until they test done with a toothpick. Adjust time for muffins. Cool completely in pan.

    While bars are baking, whisk together glaze ingredients. Pour or spread glaze onto cooled bars as thin ot thick as desired. You may have extra glaze and when I double the recipe I don't double the glaze. Let set to firm up glaze.(I have been known to sneak a corner while still hot out of the oven..yum) Cut into 1" x 2" bars. Enjoy!
