Ingredients
| 1/2 c | butter, softened |
| 1 c | sugar |
| 1/2 c | milk |
| 1 tsp | vanilla extract |
| 1 tsp | lemon juice |
| 1 1/2 c | unbleached white flour |
| 1/2 tsp | baking soda |
| 1/2 tsp | salt |
| 1 1/2 | very ripe bananas, mashed |
| 1/2 c | walnuts or pecans, finely chopped (optional) |
| GLAZE: | |
| 3 c | powdered sugar |
| 1/4 tsp | salt |
| 1/2 tsp | vanilla extract |
| 1/2 tsp | lemon juice |
| 1/2 | very ripe banana, mashed |
| 1 Tbsp | butter, melted |

Directions
Preheat oven to 350 degrees. Spray a 9"x12" cake pan with cooking spray. Set aside.I mixer bowl, cream butter and sugar together. Stir in vanilla, lemon juice and milk.
Stir together dry ingredients in a bowl and add to creamed mixture. Mix until smooth but don't overbeat. Stir in mashed bananas and nuts if desired.
Pour batter into prepared pan and smooth out.
Bake for 25-30 minutes until they test done with a toothpick. Adjust time for muffins. Cool completely in pan.While bars are baking, whisk together glaze ingredients. Pour or spread glaze onto cooled bars as thin ot thick as desired. You may have extra glaze and when I double the recipe I don't double the glaze. Let set to firm up glaze.(I have been known to sneak a corner while still hot out of the oven..yum) Cut into 12" x 2" bars. Enjoy!

Ok, I'm confused. Is there lemon juice in the bar too? All I see is lemon juice in the glaze ingredients. Your directions has lemon juice added in the bar but it is not in the listed bar ingredients. Please clue me in, I'm trying to make these today. :) Thanks.

Well, I made a different banana cake recipe that I found on Land O lakes website because I needed to use the bananas. I will definitely try this one when I get more ripe bananas they look so good. I thought maybe it had the lemon juice in the bars but it's good to know how much. I'm thinking that it is put in for a buttermilk replacement. I will have to try it. Thanks for responding.

this is such a great recipe Rose...It makes a shallow cake (bars) but the consistancy is light and fluffy like cake..I usually double the recipe and bake them in a jelly roll pan. if u do this and cut it in half, u can stack it with glaze in between, and make it into a 2 inch high cake. U can make the icing thicker by adding more powdered sugar and butter. Enjoy!
